Thank you for the really thoughtful response! I agree with many of your points. The best way I've found to talk to people able veganism is to show them that the food is awesome. Other than that, I completely abstain from arguments about it or making comparisons to others' diets. I also agree with your point that it is a deeply personal decision for every individual. Your reasons for not going vegan are completely valid - anyone who may be triggered by food restrictions should definitely consider it twice, for one.
I also wanted to add that struggled myself with the availability of foods for a long time (I've cycled from vegan to vegetarian to omnivore and back, for this very reason). It's only been in the last few years that more vegan foods are available in my area and it's not such a struggle to gather ingredients for meals.
