Do they not break down more in the freezer? I've thought about trying this (although truth be told, I don't think I have the freezer space right now), but my mother seemed to indicate they didn't fare as well there.
I've thought about canning, them, too, except I don't have a lot of canning supplies so I'd have to acquire those.
